The Twelve Makes of Christmas Day 5 - Cranberry Orange Scones


One of the things I love most about Christmas is the food. Let's be honest, it's what most people enjoy about Christmas. I love how the whole house smells like meat, spices and baking. Today I bring you something a little different, a recipe for Cranberry Orange Scones. So perfect with a cup of tea on a crisp winter's day!

Ingredients

  • 2 3/4 cups All Purpose Flour 
  • 1/3 cup sugar (or to taste)
  • 1 tablespoon Baking powder 
  • 3/4 teaspoon salt 
  • 1/2 cup cold butter cut into pieces 
  • Zest of 1 orange
  • 1 cup dried cranberries 
  • 2 large eggs  
  • 1/2 cup to 2/3 cups milk
  • 1 egg beaten
  • 1/2 cup confectioners’ sugar, plus 2 tbsp 
  • 4 tsp freshly squeezed orange juice 


Preheat the oven to 200 and line a baking tray with non-stick paper. In a large bowl mix together the flour, sugar, salt, baking powder and orange zest. With the tips of your fingers, rub in the cold butter until the mixture resembles breadcrumbs. 
 Stir in the cranberries. In a separate bowl, whisk the eggs and milk together. Add that mixture to the dry ingredients and stir until well combined. Turn the dough out onto a floured surface. Roll dough out or flatten with your hands to about 1/2 an inch and use a cookie cutter to make biscuit shapes.

 Gloss scones with egg wash, sprinkle with sugar and bake for 20 - 25 minutes until golden brown and firm to touch. Place on a wire rack to cool for 15 mins, then serve with butter, jam, cream or whatever you fancy!
